What You Need – The Pork
- 1 x Flying pig pork fillet
- 1 cup corn flour (maizena)
- 2 eggs and a splash of milk (eggwash)
- Oil for Deep frying
Method:
Cut pork into bite sized cubes, draw through the corn flour, then egg and again through the cornflour. Tap off excess flour and fry for 2 minutes 180 degrees. Just before serving, the pork should be fried again for about three minutes. Frying these cubes twice will prevent them from turning soggy with the sauce
Sweet n sour sauce
- 1 cup white vinegar
- 1 cup water
- ½ cup white sugar
- ½ cup tomato sauce
- 2Tablespoons apricot jam
- 2 teaspoons garlic
- 2tespoons Ginger
- 1 Tablespoon corn flour
- Pinch salt
Method:
Mix all sauce ingredients in a pot and whisk until thickened.
Vegetables:
Stiry fry the following vegetables…
- Red peppers, green peppers
- yellow peppers
- red onions
- pineapple (optional)
Add the pork and the sauce and toss well.
Serve with noodles or white sticky rice – Garnished with red chilli slices, sesame seeds and spring onion
