What You Need – The Pork
- 1 x flying pig pork fillet
- 3Tablespoons flour
- 2 teaspoons Dried oreganum
- Salt and pepper
- 50ml Olive oil
- 50g Butter
- 1 medium onion, finely diced
- 1Tablespoon crushed garlic
- 2Tablespoons flour
- 250ml chicken stock
- 200ml white wine,dry
- 200ml Milk and 100ml cream mixed together
- 400g sliced mixed mushrooms of choice
- 2Tablespoons chopped oreganum
- Cooked Bucatini, half a packet

Method:
- Slice pork into strips
- Coat with flour, herbs and seasoning, mix until evenly coated
- Fry on a medium high heat until golden brown, remove and set aside
- In the same pan, sauté onions in butter until translucent
- Add the garlic
- Add the flour and mix well
- Add chicken stock, and simmer for 10minutes
- Add wine and continue to simmer
- Season
- Add the cream and milk combo and mushrooms, simmer for 10minutes
- Add pork strips and cook for an additional 5 minutes
- Add cooked pasta, mix through.Add fresh orgenanum
- Finish with parmesan and fresh rocket
